Arrowroot indigenous is known as koova(yellow koova, blue koova)in India .It is used as food and medicine. This starch abundant rhizome is a rich source of calcium, potassium ,magnesium, phosphorous. Bluekoova –Curcuma leucorrhiza is a stem less perennial plant growing upto 60 cm tall. It has numerous pendulous tubers, oblong, inwardly pearl white. Leaves are broad, uniformly green ,about two feet long .
Yellow koova-Curcuma Augustifolia is a perennial and flowering plant ,with small spiked inflorescences of three or four yellow, funnel shaped flowers within tufts of pink terminal bracts. leaves grow about 2 feet tall.

Once harvested tubers are cleaned and scraped. These are washed and rubbed on a rough surface to produce pulp, it is then washed with water and the fibre is discarded. Once the starch settles in water, water is discarded and fresh water is added. This process is continued till pure white residue is obtained. The final residue (sediment) is then sundried till it becomes hard like a cake which is then ground to powder form.
